O poder calorífico (energia liberada na combustão) de um carboidrato ou de uma proteina é cerca de 17 KJ/g e de uma gordura, cerca de 38 KJ/g.
100 g de dado chocolate contêm 0,22 mol de sacarose, 11 g de triestearina (gordura), 3 g de proteína e 11 g de água. Seu poder calorífico aproximado é:

sacarose C12H22O11 – massa molar —> 342.24 g mol-1 0,22 mol corresponde a 0,22 x 342,24 = 75,3 g de sacarose (se tivesse admitido que os componentes do chocolate são apenas os que indicou obteria 100-11-3-11 = 75 g que é praticamente o mesmo obtido a partir da massa molar) assim temos: 75 g de sacarose que libertam 75 x 17 = 1275 kJ 11 g de gordura que produzem 11 x 38 = 418 kJ 3 g de proteína que dão 3 x 17 = 51 kJ o total da energia libertada na combustão lenta dos 100 g de chocolate é 1744 kJ (1275+418+51) portanto se queremos saber o poder calorífico tem que se dividir por cem gramas 1744/100 = 17,44 kJ/g resposta —> c)17 kJ/g
